Corsican products are dependent on seasons. Periods of transformation products are:

  • Cheese: from middle of November to June
  • Brocciu: from December to June
  • Pork: from November to March.
  • Chestnut (flour): from November to March.
  • Honey: from May to November.
  • Jam: from May to February.
  • Olive oil: from January to April.

Agricultural sectors, concerned about the quality of products and better marketing to have, obtained one AOC for : Brocciu, oil, honey and chestnut flour. Cheeses, meats and others are heavily involved in certification procedures should'nt be longt.
